With its January opening, The Albert Hotel in Fredericksburg instantly became one of the most stylish stays in the Texas Hill Country. Dinner is served by chef Michael Fojtasek at The Albert Hotel Restaurant.
Four dining experiences are set on the property, “with seasonal menus connected to the land through the best ingredients from the surrounding community of farmers, ranchers, purveyors, and artisans,” according to a release.
The Restaurant at Albert Hotel showcases Michelin-starred Chef Michael Fojtasek’s seasonal cuisine, for breakfast, lunch, and dinner. The Saloon is your local watering hole “where the whiskey is strong, the beer is cold, and the people are friendly.” The Pharmacy is a neighborhood market with coffee, espresso, matcha, pastries, and sandwiches made from scratch.
Junebugs BBQ, which opened this spring, now takes a front row seat at the Brockmann-Kiehne house (circa 1870), bring great barbecue and live music to the stage. Justin Spencer (aka Junebug or simply Bug) is Waterloo’s head of food and beverage. He just so happens to be a competition barbecue pitmaster with real street cred, having won best barbecue at the 2023 Memphis in May World Champion barbecue cook-off.

Clayton Korte’s architectural design preserves this Hill Country landmark. The 175-year legacy of the Keidel family includes historic structures like the Keidel home and Brockmann-Kiehne House, much like other recent historic reimaginings like Mod Motels’ remake of The Seeker Hotel in Stephenville, and the lovely new Nutt House Hotel on Granbury’s famous square.
“Word + Carr Design Group crafted the landscape with native Texas grasses, live oaks, and mesquites, using reclaimed materials to create meandering gardens that reflect the region’s natural beauty,” they say.
Guest rooms range from cozy bunk rooms to luxurious suites, including the exclusive Albertina House, a historic private four-bedroom residence situated on Main Street. Interior designer Melanie Raines chose a color palette that ranges from rich sage and deep emerald, with custom-built-ins, tiled showers, and curated textiles.
The Spa at Albert Hotel has seven private treatment rooms. Signature treatments include the Albert Signature Massage and Enchanted Rock treatment. The Albert Hotel features 3,600 square feet of versatile event spaces as well.
