Just in time for the summer of 2026, Southlake will welcome Vandelay Hospitality Group’s landmark eatery. Hudson House is one of restaurateur Hunter Pond’s biggest hits. It will land at 1131 East Southlake Boulevard ― the former RA Sushi spot.

Hudson House has earned a devoted following for its polished yet approachable atmosphere, standout lunch and dinner menus, and buzzy happy hour,” according to a release. “The exact opening date will be announced closer to launch.”

The first location was planted in Highland Park in 2017. It was a hit, with its raw bar, classic menu of American comfort dishes, and bar program ― leading with its famously crisp “World’s Coldest Martini.” Many fans are still doing diligent research to confirm this claim. In fact, Hudson House is a perennial happy hour favorite for its martinis alone. At the Fort Worth hub, you can barely stir the crowd with a swizzle stick.

Since 2017, Hudson House has expanded to seven locations, including one in Houston’s River Oaks, and another, which opened in 2023 inside Fort Worth’s historic ice house at the corner of Camp Bowie and Dexter Avenue. The most recent opening was in Frisco in early August. Southlake dining continues to add depth.

The Southlake location will feature warm leather booths, a large wraparound bar, an outdoor patio, and a full sit-down raw bar, as in many of its other locations.

“Southlake has been on our radar for years — it’s a tight-knit community that values great hospitality and consistency,” said Hunter Pond, Founder & CEO of Vandelay Hospitality Group. “We’re excited to bring our East Coast raw bar, signature cheeseburger, and the ‘World’s Coldest Martini’ to the neighborhood.”

Favorites on the bar menu include The Classic martini, one they call Bleu & Gold, a dirty martini made with vodka, olive juice, bleu cheese salt, and housemade bleu cheese olives. The Lemon Drop is lemon vodka, fresh lemon, topped with Limoncello foam, and The Espresso is a newer classic made from vodka, espresso, Kahlúa, and Baileys.

Other signature cocktails include the Frozen Bellini, Strawberry Spritz with strawberry Aperol, grapefruit, and prosecco, the Spicy Mexican, a blend of reposado tequila, jalapeño, cucumber, and fresh lime, plus a classic Manhattan.

An Ode to East Coast Dining at Hudson House

Hudson House pairs timeless American classics with coastal influence and a celebrated raw bar. The Fort Worth menu was the first to include signature sushi rolls as well. No word on whether that will be added to Southlake’s Hudson House just yet.

The menu includes Hudson’s Avocado Dip served with ranch chips. The Cheeseburger is another fan favorite with thin patties, American cheese, pickles, and house Hudson sauce. The Chicken Parm is served with creamy tomato pasta and Reggiano cheese.

The American Tuna Tower features fresh ahi, avocado, cucumber, local greens, and a wasabi vinaigrette. From the Hudson House raw bar, you’ll find the specialty seafood tower known as The Bouquet. It features “a spread of East Coast oysters, shrimp cocktail with chipotle remoulade, princely-cut snow crab claws, and tuna tartare.” Ideal for happy hour noshing with friends.

Vandelay Hospitality has a diverse portfolio of brands from American to Mexican, ranging from Chicago-inspired to Hollywood-inspired. Southlake will soon get a taste of its favorite East Coast inspiration when Hudson House opens there.
