Many visitors to Rough Creek feel like they’ve been swept away to the Texas Hill Country. Among his many honors and accolades was an invitation to cook at the prestigious James Beard House in New York. He was a featured chef at the James Beard Foundation Awards dinner. Chef Thompson is a fan favorite at both Chefs For Farmers Food & Wine Festival, which is held annually in Dallas, and the Fort Worth Food + Wine Festival.
At Rough Creek Lodge, everything is made by hand, including the breads, focaccias, and pizza doughs. They are made from a sourdough starter that the chef has been feeding twice daily since he arrived in 1997. It creates a flavor and tenderness that can’t be duplicated.
